Who else loves Autumn besides me? It is my FAVORITE time of year, and I have no judgements when pumpkin everything comes out in September, because I LOVE it! I made these decadent pancakes this morning and absolutely need to share! Feel free to get creative with toppings too–next time I plan to mix vanilla extract and sugar free maple syrup with some plain greek yogurt as a topping!
Macros: (2 pancakes w/ no toppings) 182cal, 8g fat, 10g carb, 22g protein
Ingredients (this makes 4 servings):
-2tbs butter for frying
-4 egg whites
-1c pumpkin puree
-2c vanilla protein powder
-1tsp pumpkin pie spice
-1tsp baking powder
Topping ideas:
-Greek yogurt
-Shredded coconut
-Almond butter
-Pumpkin seeds
-Chopped nuts
-Maple syrup
Directions:
-Mix all ingredients together in large bowl (except toppings)
-Melt butter in frying pan over medium heat
-Add in pancake batter to reach desired size (total recipe makes 4 servings)
-Cook 5 ish minutes one side and flip
-Make sure pancake is cooked all the way through, then remove from heat
-Add toppings and enjoy! OR put in air tight container and store in the freezer or refrigerator until ready to eat
