No-Bake Carrot Cake Energy Balls

Who doesn’t love carrot cake? If you don’t, you’re wrong. It’s amazing! These fuel-rich energy bites are healthy, and have a very similar taste to real, decadent carrot cake. I always make a test batch of a new recipe for myself in case it sounded a lot better in my head than it came out to be in reality, but these were my best creation yet! They are super easy to make and hold together pretty well too.

For me, having snacks I can grab really quickly or eat in the car is huge, and I get really tired of eating trail mix and beef jerky, so energy bites are a great alternative! Plus, these seem like dessert!

Macros (per ball): 79 cal, 6g fat, 5g carb, 2g protein


-15 dried pitted dates (maybe more to achieve desired sticky costistency)

-3c shredded carrots

-1c almonds

-1c unsweetened shredded coconut (save half to roll balls in at the end)

-1/4c honey

-2tsp cinnamon


-Put all ingredients together (except other 1/2 coc0nut) in large food processor and blend until finely chopped and sticky

-Form into 1/2 inch balls

-Roll in coconut

-Store in fridge or freezer for a few hours to allow to harden

-Carrot cake gainz! Enjoy!!
